The first thing I started doing to make our diet healthier was to bake all our bread. Now, don’t be too impressed, I use a bread machine and a standard recipe that came with it. EAT_BAKING STATION labeledIt takes about 2 minutes to mix up the ingredients because I keep them lined up on the counter where I use them — all except the yeast which I store in the freezer.

WHITE BREAD (for 2 pound loaf bread machine)EAT_WHITE BREAD
1. Water – 1 1/4 Cup
2. Oil – 2 Tablespoons
3. Sugar – 3 Tablespoons (This is not so good for you, but the yeast will not rise without it. I have reduced the volume to 2 Tablespoons without significant effect. I have also substituted honey, molasses, and maple syrup at different times. This choice is a matter of taste.)
4. Salt – 1 teaspoon (I usually omit this. If I do include it, I use only a pinch.)
5. Flour – 4 cups (Use BREAD FLOUR for best results. It is ground more finely than all purpose.)
6. Bread Machine Yeast – 2 teaspoons (I have other measures for different types of yeast, but I have not tested the other yeasts yet. This one works very well.)
Cook it on the bread cycle.

A funny thing happened almost immediately after I started doing this… I started feeling better. I noticed a small increase in stamina and thought “no, just wishful thinking”. But when I paid strict attention, it was true. Making only one change and eating no-preservative, home-baked bread made me feel better. Who knew?
